In the northern realms, as the last traces of winter snow melt away and the earth remains firm beneath tentative rays of warming sunlight, the birch forests begin preparing for a silent celebration. Deep within their trunks, root systems that have slept through the harsh winter awaken like revitalized capillaries, eagerly drawing moisture from the thawing soil. The entire tree becomes a vessel for the forest's sweet essence.
Harvesting this "forest nectar" is a precisely timed rendezvous with nature. Timing is everything. Typically spanning late March to mid-April, the optimal collection window lasts no more than ten to fifteen days.
The process remains entirely manual. Harvesters select mature birch trees at their prime, with trunks exceeding twenty centimeters in diameter. About one meter above the ground, they carefully drill a shallow hole just deep enough to reach the cambium layer, ensuring not to damage the tree's core. A sterilized tube is then gently inserted, like adorning the tree with a delicate earring. Crystal-clear sap begins flowing through the tube into suspended collection bags.
Each mature birch tree yields only five to ten liters per harvesting season - merely a fraction of its abundant reserves. After collection, harvesters meticulously remove the tubes and seal the tiny openings with wooden plugs. The birch's remarkable self-healing capacity will completely close these minor wounds within months.
The freshly gathered sap appears almost colorless, with water-like clarity carrying a subtle woody fragrance and gentle sweetness. Rich in polyphenols, flavonoids, amino acids, vitamins and minerals, it ferments easily at room temperature, making preservation crucial.
Thus encapsulated, the forest's essence begins its next chapter.
